Nutritionist at Gila River [UNPUBLISHED]

Licensing

My grandfather was a block cook at Gila River.   In 1944, Grace Lawson, a nutritionist, came to camp to give basic nutrition and cooking lessons.   The recipies were in English and Japanese.  My grandfather kept copies of the handouts which totaled over 100 pages.   I present here some of the more interesting handouts.

My grandfather was a restaurant cook between the world wars so he already had several cookbooks coming into camp including the Fannie Farmer cookbook and the "My Better Homes and Garden Cookbook".  in camp, he managed to acquire a copy of "Quantity Food Service Recipies"
